It represents something more meaningful: a recognition that the history of gastronomy is not a linear march from primitive to sophisticated, but a complex archive of knowledge that modern cooks are only beginning to excavate seriously. Roman garum was the product of centuries of accumulated empirical wisdom about fermentation, preservation, and flavor amplification — wisdom that was largely lost to Western European cooking after the fall of the empire and the gradual replacement of garum with salt and vinegar as primary condiments.

In recovering this technique, contemporary chefs are doing what the best culinary arts practitioners have always done: looking backward to move forward.
